You will also discover the aroma of cocoa, sugar cane and spices as you sip your coffee.
The origins of coffee

The famous Skybury plantation is located in the Atherton Tableland, a fertile plateau in northern Queensland, Australia. The area includes the towns of Atherton and Mareeba and is adjacent to the Baldy Mountain Forest Reserve. Water is supplied by the Barron River, which is dammed by Lake Tinaroo. Atherton itself was created by several volcanic eruptions, and although the volcanoes are considered extinct, scientists do not rule out the possibility of further eruptions. In 1875, the first European visitor to the area was J.V. Mulligan, who was followed two years later by John Atherton, who settled here and named one of his towns. Both men were attracted to the area by nothing less than the desire for precious metals, gold and tin. Tin had been mined in Atherton since 1880.
But back to Skybury, and the pride of Australian artisan coffee. It's 10km from Mareeb and an hour's drive from Cairns airport. The plantation is owned by the MacLaughlin family, the oldest in Australia. It is 550-600 metres above sea level, produces around 150 tonnes of coffee a year and employs around ten people.
The coffee bushes are planted so that they can be harvested practically all year round. And a little so that the many visitors to the plantation can be shown the different stages of growth of the bushes and the development of the coffee berries. Tourists can also visit the processing area for red coffee beans. Skybury uses a unique and meticulously refined process for processing coffee, which involves removing the coating from the beans by a process called pressing. The beans are poured into large water tanks where they are pressed through crushing plates to remove the fleshy coating from the beans. This is followed by several days of fermentation in fermentation vats. Tourists are also shown how the green coffee beans are dried and packaged (you can instantly recognise the jute bags used at Skybury, by the way, as they are decorated with artistic prints). In another area, tourists can learn the secrets of coffee roasting and, of course, taste the delicious drink made from perfectly roasted coffee. The baristas will show them the ideal way to grind coffee, the importance of its extraction and the different ways to prepare it. The tour ends with a screening of the film Coffee Dreams, projected on a curved screen 6 metres long.

Use at least 1.5-2 teaspoons (approx. 7 g) of ground coffee per cup of coffee.Pour the coffee into water at a temperature of approx. 95°C.
