The taste and foam of coffee
Brazil's Fazenda Paredao coffee is characterised by full body and a sweet, honey-vanilla aroma with other subtle sub-layers. It has a predominantly stone fruit flavour. At the same time, the cup has a wonderful floral aroma and the cream is pleasant, light but compact.
Origin of coffee

An ancient legend tells how coffee bushes made their way to Brazil. Above all, it required love and an unfaithful wife. Once upon a time, in 1727, when Brazilians only knew coffee from nearby French Guiana, the Brazilian governor would have liked to know it better. So he sent a young sergeant, Francisco de Mello Vane, and his companion Francisco Reed to fetch coffee beans or young plants. As usual, the governor of the French Guiana D´Oliviers wanted to hear nothing of such a gift or deal. During the time the Sergeant was negotiating with the Governor, Francisco Reed was not idle. He seduced the governor's wife and seemed so charmed that she thanked him with a bouquet of flowers. As proof of his love, he tied a few coffee bush branches with their red berry fruit. The Brazilian brought the seductive coffee back to his country and the seeds were planted in the São Paulo region.
But what do we know about the Paredao plantation? It is located in the Cerrado Mineiro area in the southeast of Brazil. According to the Cerrado Coffee Growers' Association, it covers 55 departments and 210 000 hectares of coffee plantations, managed by around 4 500 producers. Annual production in the region is estimated at 5 million 60 kg bags, less than 13% of Brazil's total exports. Cerrado Mineiro was the first region in the country to obtain protection of the designation of origin. Therefore, coffee with the word "Cerrado" in the name must originate exclusively from here.
Specifically, the Paredao farm is looked after by the experienced Pedro Humberto Veloso. Founded in 1977, Veloso Coffee produces on 2,480 hectares. More than 12 million Arabica, Catuai, Acaia and Bourbon varieties are grown here. The altitude of 1,100 metres above sea level, subtropical climate and dry winter rainy summers are ideal for the coffee bushes. In addition, the area has a sufficient water supply, which coffee farmers use for so-called washing.
The fruit of the coffee shrub is selectively harvested between June and August. Only the ripe cherries are harvested and transported to the processing plants. The berries are poured into water tanks, pressed through crushing plates and the loose coffee beans are sent on to fermentation. Drying takes place on so-called African beds, high terraces exposed to the sun. This makes Brazil's Fazenda Paredao coffee deliciously sweet. Cerrado Mineiro coffee is renowned for its intense aroma and honey-fruity flavour. In fact, this region was the first in Brazil to be awarded the Protected Designation of Origin, so there is no doubt about the quality of the coffee. Especially when it is tended by Pedro Humberto Veloso, who has been growing the coffee since 1977. This microlot is simply a coffee delicacy. Treat yourself! Place of origin:

Use at least 1.5-2 teaspoons (approx. 7 g) of ground coffee per cup of coffee.Pour the coffee into water at a temperature of approx. 95°C.
