From May to September, a unique coffee is harvested at San Martin Farm in central Brazil. The 35-hectare plantation is run by the third generation of Nelson Rivellini's family, whose Italian grandfather came to Brazil to grow coffee. He started with him in Sao Paulo and later continued in Paraná. In the sub-region of Patrocínio (Minas Gerais), the current plantation is thriving, as evidenced by the fact that it exports coffee to many countries around the world. At the same time, it is a member of the Cerrado Coffee Growers' Association, which guarantees a high level of quality and a clear origin of authentic coffee. Each variety is given a unique numerical code by the association, which allows a specific plantation to be verified afterwards.
The natural character of the area is marked by the vast tropical savannah. Summers are hot and humid, winters dry and cold. The coldest month is usually July and the warmest January. It is no wonder that Patrocínio has become one of the most important cafés in Brazil. Linked to more than three quarters of the local economy, the coffee industry employs 30 000 people.
The red fruits of the coffee trees are processed in a process known as semi-washing at the San Martin farm. This combines the advantages of the dry and wet process. The coffee is then called semi-washed or honey. The whole process involves harvesting the coffee cherries and processing them with peeling machines that remove the skins in water. So far the process is the same as for washing. However, the coffee beans, wrapped in a sweet pulp, are left to dry in the sun while half washed. Only when they have dried to the required degree do the workers remove the pulp, which forms a thin parchment on the coffee. This method of processing the coffee increases the intensity of its flavour, giving it a pleasant fruity aroma and a pleasant acidity. Smooth, sweet and nutty. With orange tones.
