ABOUT THE TASTE OF COFFEE

ABOUT THE ORIGIN OF COFFEE

The region of Sao Paulo, where the delicious Santos NY2 coffee is born, is located in the southeast of Brazil.
Coffee production is one of the most important agricultural sectors, and therefore the cultivation, harvesting and beans are the main focus of attention.
The optimal climatic conditions and the extremely healthy plants combine to guarantee the great quality of Arabica coffee (Coffea arabica) with a full body and long aftertaste.
The coffee shrubs grow to a minimum height of three metres with round, dark green leaves.They were originally grown in the rainforest under the shelter of tall trees.
For this reason, banana trees or tall maize are planted on the edges of coffee plantations - coffee is sensitive to excessive sunlight and strong winds. It takes 6-9 months after flowering for the first fruits to appear on the bushes.
The oval fruits resemble cherries, yellow at first, then red (ideal for harvesting) and finally dark purple. Underneath the skin, which resembles skin, are two coffee beans.
On average, one kilogram of coffee beans can be harvested from a coffee plant each year.The beans are removed from their skins on specialised lines, either dry or wet.
In the case of the Santos NY2, the beans are washed before drying.First, the poor quality beans are selected in water - the ripe fruit sinks to the bottom while the bad beans float on the surface.The ripe beans are pressed between crushing plates to remove the skin and pulp.
This is followed by a very strictly controlled fermentation process, which determines the character of the coffee. Drying takes place in natural sunlight until the coffee reaches a water content of 12-13%. The 10% moisture content is achieved with the help of machines.
