Arabica Colombia Barrique Rum Fermented is definitely recognisable when you open the bag. Its delicate rum aroma cannot be mistaken for anything else. In the cup you will be greeted by a rich full flavoured coffee, you will of course notice the aforementioned rum, but also the attractive cherry. This coffee is moderately acidic with an intensely impressive aroma.
ORIGIN OF THE COFFEE
Let's say that Caldas and all Colombian patriots mention excellent coffee, but also beans, bananas, rice and sugar cane. These crops are the reason Colombia's Midwest region is doing so well. But it is mining that makes it the richest in the country. The gold, silver, coal and limestone from Caldas often travel the world. Before the Spanish colonial conquest, there were indigenous tribes such as Pijaos, Ansermas, Armas, Chamies and Quimbay. They became famous for their beautiful gold work. In 1523, Sebastián de Belalcázar arrived in their territory, and de Caldas was named after Francisco José Caldas in 1905. In 2011, the region was inscribed on UNESCO's list of important cultural heritage sites.
Of course, the coffee plantations are the most interesting part of the region for coffee lovers. Caldas lies on Colombia's so-called coffee axis. Together with the regions of Quindío, Risaralda and Tolima, it produces the best quality coffee in the country. Coffee plants were first planted in Salazar de las Palmas, and during the 20th century coffee became Colombia's primary export. Although its cultivation initially met with resistance from growers, the first harvest has to wait about five years.
In addition to the excellent quality of the local coffee, the growing conditions are ideal: the average annual temperature ranges between 8 and 24°C, the volcanic origin of the soil makes it rich in minerals, and the Andean rainforest provides a pleasant microclimate for coffee plants. Colombia has something unique in its profile, Barrique Rum Fermented. The secret of harvesting from the Finca San José farm lies in several principles that guide the family business. The first is the hand-harvesting of coffee cherries alone, the second is the careful selection of coffee beans, and the third is the fermentation of the coffee in rum barrels.
The current owner of the plantation, Guillermo Alvarez, is the third generation of farmers, Finca San José. Founded in 1963, it now covers 222 hectares at an altitude of around 1,400 metres above sea level. To produce Colombia Barrique Rum fermented coffee, the highest ripeness coffee cherries are harvested. After sorting and washing, in which the skins are removed, they are fermented in fermentation tanks for 20 hours. During this time the sweet pulp dissolves and covers the seeds. The green coffee is then dried. The coffee is then sorted again by the workers and finally poured into wooden barrels in which rum is aged for 8 years. Here the coffee ferments again, but this time for 3 months. During this time, it absorbs the pleasant rum tones, while enriched with the aroma of cherries. Farm workers sample and check the harvest every 30 days,
Finally, it is worth mentioning that Finca San José not only focuses on excellent coffee, but also on sustainable development, nature conservation, equal social conditions and the preservation of the Calda tradition. It smells of rum and contains no alcohol. It has grown up in the sun and hasn't burnt, it has come from Colombia and it hasn't tired. Guillermo Alvarez's exceptional crop provides exceptional flavour and high quality coffee. It comes, after all, from a traditional family farm that plants the coffee bushes in volcanic soil and ages their beans in rum barrels every quarter. Decide the outcome. We are burning with desire! Wet instructions for use
Use at least 1.5-2 teaspoons (approx. 7 g) of ground coffee per cup of coffee.Pour the coffee over water at a temperature of approx. 95 °C.
