Origin of the coffee
As the name suggests, this coffee is grown without fertiliser or chemical treatment. The Pedregal region of Colombia lies between 1600 and 2000 m above sea level and its plantations are mainly planted with the Arabica coffee sub-species Caturra. Bourbon coffee, from which Caturra is bred, is less resistant to rain and wind (the fruit often drops), but the quality is excellent.
Colombia is one of the top three coffee producers in the world. Despite the short-term problems of fungal decay of coffee beans, which hit the plantations a few years ago, the country exports more and more every year. In 2013, it exported nearly 10 million bags of coffee, almost all of its production. Perhaps the main reason is that Colombians don't drink coffee. They drink no more than 2 litres of coffee per person per year.
Fruits like cherries ripen gradually, so they can be harvested almost all year round. The so-called wet process is used to process coffee. The coffee beans are poured into large water tanks where they are crushed using crushing plates, which means that the beans are stripped of their coating. The cleaned coffee beans are then poured into fermenting vats, where they ferment for 36 hours, getting rid of the last of the excess coating, dried, polished and sorted. The beans are left to rest for one to two months before being packed in 60 kg bags and sent for sale. When we hold a cup of coffee in our hands and smell the aroma, we always think of the people who made it possible for us to taste this delicious drink. Grind the coffee according to its type.
Use at least 1.5-2 teaspoons (about 7 g) of ground coffee per cup.
Pour off the coffee with water at about 95 °C.
