Coffee from the Huila region is the ideal filter coffee when its flavour profile is at its best. Its full flavour and pleasant acidity are impressive. Fermentation with the addition of passion fruit and other local fruits gives the coffee fresh fruity notes, mild acidity and a balanced sweetness. The drink has a clean flavour profile and a lightness typical of the filter.
Origin of the coffee
The coffee trees belong to the Finca Monteblanco farm, located in the Huila Acevedo region of Colombia. The area is known for its high altitude (1 200-2 000 m) and its rich volcanic soil, which is ideal for growing quality coffee. The farm focuses on the cultivation of varieties such as Caturra, Geisha, Pink Bourbon and Pacamara, which are characterised by their unique flavour profile.
At Finca Monteblanco, the coffee goes through a meticulous process that includes hand-picking and fermenting the cherries. For this batch, the 'Purple Caturra' variety was chosen, which has a higher sugar content than the traditional red Caturra. The cherries are fermented with a mixture of yeasts and lactobacilli, enriched with local fruits such as passion fruit and cholupa. The fermentation process takes 8 days and contributes to a complex flavour with fruity notes and a slight acidity. After fermentation, the coffee is dried on parabolic beds, which ensures even drying and preserves the quality of the coffee. Although the golden El Dorado remains hidden from us, other Colombian riches have been discovered. During our hunt, we came across a farm called Finca Monteblanco, which offered us coffee so exceptional that it can be considered a real treasure. They grow their coffee among the mountains and rivers, which has an unmistakable taste, ideal for filter coffee. The beans are carefully selected and fermented with local maracuja. The process imparts a refreshing acidity to the coffee that immediately charms us. So instead of searching for hidden treasures, we discovered a gem in every sip. Place of origin:

Anaerobic Instructions for use
Grind the coffee for the filter (coarse grind). Add 1 g coffee to 14 ml water in the V60 filter. In a circular motion, pour the coffee into the water at about 93°C.
