Crema and the taste of coffee
Colombian Huila Rojas Estate Geisha bean coffees are by their very nature absolutely luxurious. The Geisha variety is known for its sweet taste, rich fruit and floral notes, all of which are present in this coffee - a wonderful combination of apple, papaya and lime, complemented by bittersweet almond. The sweet floral aroma crowns the overall flavour of the coffee. Because it is an arabica, you get a light, cohesive and bright crema.
Origin of coffee

When we say in the introductory text that this is a "pedigree" coffee, we are not joking at all. So-called micro-breeds are varieties that are grown in a single place, not from multiple harvests and multiple plantings. With microlots, you always know exactly where it was grown, so you can enjoy that unique taste that comes only from that particular plot. They are processed separately from the other coffees in the plantation to highlight their special qualities. This is the reason why microlots are in high demand, but also why their availability is limited.
The El Bolsón farm, run by Eliécer and Elvia Rojas and their five daughters and four sons, is located in the west of Colombia. The Huila region is mountainous, including the third highest mountain in the country - the Nevado de Huila volcano. The area is the headwaters of Colombia's largest river, the Magdalena, on which the Betania Dam is located. The coffee plantations are located between 1 450 and 1 650 metres above sea level and cover an area of 26 hectares. However, only 2 percent of the area is covered by the geisha variety - 9 000 plants in total.
Let's stop for a moment at the geisha. It is a coffee variety indigenous to the Gesha region of Ethiopia. The plant can grow up to 5 metres tall and yields abundant crops above 1 400 metres. It does not like direct sunlight, which damages the leaves. Geisha is renowned for its unique flavour profile and therefore its high exclusivity and selling price.
The Huila Rojas Estate Geisha microlot from Colombia is harvested between October and November. In the region, the coffee trees are harvested again in April and May. Because this is a unique coffee, the red berries are picked exclusively by hand by members of the Rojas family to exclude any unripe or damaged berries.They are then poured into mills where the skins and pulp are removed using water jets and crushing plates. The beans were then placed in barrels filled with water and left to ferment for several hours. This allowed the remaining pulp to dissolve naturally. The farmers dried the so-called washed coffee in direct sunlight.
El Bolsón Farm is a member of the Cadefihuila Cooperative and the Guacacallo Association. The members share a common goal of improving the cultivation and production processes so that the result is the best coffee possible. Their cohesion and hard work is admired by all their neighbours and their coffee is admired by all connoisseurs. The family of Mr Eliécer Rojas, who runs a farm in the southwest of Colombia, is a role model for the producers. The "pedigree" Geisha has a unique flavour profile, with nuances of apple, lime, papaya and almond. The aroma is typically floral and sweet. This exclusive variety is sure to interest you. Wet instructions for use
Use at least 1.5-2 teaspoons (approx. 7 g) of ground coffee per cup of coffee.Pour the coffee over water at a temperature of approx. 95 °C.
