A blend of Caturra, Castillo and Colombia varieties undergoes a unique processing process that starts with a 24-hour pre-fermentation, which gives the beans an intense spectrum of flavours. The cherries are then subjected to a 5 day anaerobic fermentation, during which they are blended with dried grapes, contributing to a unique character with subtle grape and spice notes. The coffee is then mechanically dried for 10 days, which ensures even moisture content and ripeness of flavour.Grind the coffee to filter (coarse grind).
