Crema and the taste of coffee
Colombia's Maragogype gigante Finca El Botón is one of the sweeter coffees, with a subtle acidity, especially notes of dried fruit and juicy peach. These are nicely followed by chocolate flavours, which give the coffee a harmonious and complex taste.
Its liveliness is enhanced when brewed in a filter, French press or lever coffee maker, for example. Depending on the preparation method, different degrees of crema are produced on the surface. But always soft, light and cohesive.
The origins of coffee
The coffee you are reading about comes from the northwest of Colombia, a South American state with the second highest biodiversity in the world. No wonder the coffee plantations there produce coffee beans with exceptional flavour and aroma.
The Antioquia region is one of the largest coffee producing regions in the country. It is defined by the Cordillera Occidental and Cordillera Central mountain ranges, which create a unique, humid microclimate. Abundant moisture is provided by the many rivers that flow from the mountainsides into the valley. The ubiquitous green vegetation perfectly hides the coffee plantations, one of the most famous of which is run by the third generation of the Herrán family. And this is what interests us.
The Hacienda El Botón farms around 200 hectares and has been growing Maragogype coffee trees since its foundation in 1931. It's a variety of Arabica that probably evolved as a spontaneous mutation of the Typica variety in the Maragogipe region of Brazil. It is known as elephant bean coffee and boasts really large beans and at the same time relatively low fertility. However, in the world of coffee lovers, it is a rarity and, when harvested from a traditional farm, a sought-after delicacy.
The Herrán family farm enjoys the excellent soil and temperature conditions of the Antioquia region, as well as the shade of the mature trees in which the coffee trees grow. The family harvests the ripe coffee cherries only by hand (from September to January), precisely to avoid picking unripe or half-ripe fruit. The coffee is processed by washing, i.e. with water, in which it ferments for several hours. The aroma and flavour of the coffee is thus accentuated by its fruity, fresh and sweet character. The beans are then dried in driers to obtain a homogeneous moisture content.
It may also be worth knowing that the way Herran coffee is grown has earned them Rainforest certification. Hacienda El Botón also has its own coffee nursery, which guarantees that the entire crop is indeed the unique Maragogype variety. Mountains, greens, rivers, traditions. The unusually large coffee beans from the north of Colombia have absorbed the best that the Antioquia region has to offer. Therefore, you can make a sweet chocolate coffee with peach and mild acidity. The bigger the coffee, the less of it is harvested. However, the Maragogype variety is definitely worth trying. Use at least 1.5-2 teaspoons (approx. 7 g) of ground coffee per cup of coffee.Pour the coffee into water at a temperature of approx. 95 °C.
