The origins of coffee
The Barahona region, also known as Santa Cruz de Barahona, is located in the south of the Dominican Republic. It is one of the country's most important areas, a tourist destination and a famous coffee-growing area. It can be said that the temperature is at the same level all year round. In January, the average temperature is 24.8°C and in July 28°C. From May to June and from September to October, there is more significant rainfall. The high altitude of the coffee plantations and the great climatic conditions allow local farmers to develop a truly exceptional taste. Not for nothing, Barahona is one of the best gourmet coffees.
The Dominican Republic exports only 20% of its total production (around 25 000 tonnes) each year, mainly due to high domestic consumption. Typica is the most cultivated variety, the coffee is usually harvested between October and June, and most farms produce coffee bushes in plantations of less than 8 hectares. In addition to Barahona, coffee plants are also grown in Bani, Cibao, Ocoa, Neyba and Valdesia. The Dominicans have been producing coffee since 1720, currently mainly ecologically, under the shade of pine, macadamia and guava.
The fruit of the coffee plants is processed on farms in the so-called wet method. This means that the ripe coffee cherries are poured into water tanks by workers and then crushed through crushing plates to remove the skins. They are then fermented in fermentation vats and finally dried in kilns or in sunlight.
