Honduras Geisha Santa Barbara Trinidad SHG is one of the most balanced, full-bodied coffees. It has the sweetness of jasmine flowers on the nose and citrus and nuggets on the palate. Expect a smooth, light crema.
Origin of coffee
What is Geisha coffee anyway? The most exclusive and expensive kind in the world. It wins medals in every competition and is sought after in every luxury coffee shop. The variety itself is believed to have originated around the village of Gesha in western Ethiopia. It has a slightly atypical appearance - the coffee bushes are so tall that they have to be harvested from a ladder. But the root system is very shallow. The plant requires greater height, only moderate sunlight and a certain humidity. The fruits are oblong. Thanks to the combination of all the climatic factors, Geisha has a unique flavour and is breaking record after record at auction.
From the forests of Ethiopia, this coffee has made its way around the world via Kenya, Tanzania, Costa Rica and Panama. In Honduras, it is grown by the family of José Salomon Fajardo and Adriano Bueso, who live in a municipality in the northwest of the country, in the Santa Barbara department. Its inhabitants identify themselves as Jews, which is why, for example, a street is named after former Israeli Ambassador Shimon Agur and the Plaza Jerusalem sports centre was built with Israeli funding.
Coffee is grown in Trinidad at an altitude of 1350-1400 metres. The Finca Jerusalén farm brings together several small farmers from the villages of Montecristo, El Guijo and Carretal. The coffee cherries are harvested by hand and processed using traditional methods, respecting family heritage and conservation. The skins are mechanically removed from the red berries, the beans are left to ferment for 12-16 hours and then washed by hand by the farmers. The geisha is dried to a moisture content of 11-12 percent and is usually dried on concrete slabs in a layer of about 3 cm. This should be raked at regular intervals, at least once every hour. The coffee must be sorted before it is packed and sent to the exchange.
Finally, perhaps just a comment on the name Micro Lot. This designation refers to selected coffees with a 'family tree', i.e. a precisely traceable plantation, grower and processor. You will recognise jasmine and tropical fruit flavours in the aroma. Those who make Geisha will enjoy a very aromatic and lovely floral experience.
