SHG BIO decaffeinated coffee beans from Honduras do not deny their origin. The Honduran crop is characterised by caramel, chocolate and berry fruits. It has it all. The pleasant sweetness is nicely complemented by fresh red currants. The complex flavour is enhanced by a medium roast. The crema is smooth, light and compact.
Origin of the coffee
In Honduras, more than 100 000 families grow coffee trees, of which about three quarters cultivate less than 2 hectares. The plantations are generally planted at an altitude of around 1 500 metres. This is also the case for Honduras' decaffeinated SHG BIO (where SHG stands for Strictly High Grown), which comes from the Copan region in the west of the country. As well as being known as a major producer of quality coffee, you may also be aware of the archaeological site, one of the largest cities of the Mayan civilisation.
This coffee is grown and produced by the farmers of the Cooperativa Cafetalera Capucas Limitada, an organisation dedicated to the promotion, education and development of tourism (especially ecotourism) for producers. The cooperative also runs a restaurant and several greenhouses, as well as beekeeping. Its main objective is to enable its members to grow economically and to be independent. It also allows some farms to focus on the production of organic certified coffee. Organic coffee is more challenging and costly to produce because without industrial sprays and fertilisers, coffee trees have lower yields and less resistance to pests.
You may still be wondering how coffee beans were decaffeinated. This was done by Swiss Water Processes. This is a certified process whereby coffee is immersed in hot water and the extracted caffeine is captured in activated carbon filters. The filtration is circular and takes several hours. Because the caffeine molecules are relatively large, they remain in the filters, while the aroma molecules and other substances that contribute to the coffee's unique taste and aroma pass through the filters and are returned to the coffee beans. The biggest advantage of the Swiss decaffeination method is that it uses no chemical solvents at all and returns the water used in the process to the coffee plants as irrigation.
