Coffee origins

The Chiapas region is located in the south of Mexico. It borders directly with Guatemala, so it's no wonder they have many similarities. Coffee from both countries has a mild, fruity and slightly nutty flavour. Growing in hilly terrain is also done in a similar way.
Each cup of fragrant coffee could tell its own unique story. Small-scale farmers growing on the slopes of the Sierra Madre de Chiapas (Cordillera Central) face not only a rapidly changing climate, but also an uncertain social situation.
Farmers in the Chiapas region of Mexico are generally grouped in associations. The associations help farmers to buy land and invest in new technologies. The most common coffee grown in this area is the Arabica coffee sub-species Caturra, a Bourbon mutation. It has high production and excellent quality. It requires extremely careful management and fertile soil.
In Mexico, Chiapas BIO is grown without industrial fertilizers or conditioning agents. It is harvested from September to January. The coffee cherries are processed by washing, then the beans are dried and sorted. Mexico is the fifth largest coffee producing country in the world.
The Chiapas region, with its humid tropical climate, has been populated by many European farmers. Among the farmers are Germans, French and Italians. The third generation of modern coffee growers counts 80 families. Fermented, rich in flavour and with a light roast, this is the Mexican arabica we have literally fallen in love with. When you taste it, you'll know why. Because it has fruity and floral notes, complex, harmonious and just the right amount of freshness.
