Cream and the taste of coffee
Mexico Chiapas Decafe coffee has a rich and full-bodied taste with a variety of flavours. You can detect tropical fruits, nuts and chocolate, as well as a pleasant tobacco overtone. There is no sign of decaffeination in the taste or smell of the coffee. Being arabica, expect a lower, more subtle, more cohesive cream.
The origins of coffee

The Chiapas region of Mexico is home to ancient Mayan cultures, beautiful natural areas and tourists from all over the world. It is located in the southeast of Mexico, near the border with the regions of Oaxaca, Veracruz and Tabasco. Its coast is washed by the waters of the Pacific Ocean and its hills are often covered in fog. Chiapas has a humid, tropical climate with an average rainfall of around 3000 mm/year. The mountain ranges are characterised by high humidity and a mild climate, suitable for the cultivation of many crops, including coffee trees.
The Caturra variety is widespread here. The plants are small, compact in size, have good yield potential but are very susceptible to pruning and fungal diseases. Caturra is a natural mutation of the Bourbon variety, discovered in Brazil in the early 20th century. Thanks to a mutation in a gene, Caturra coffee plants are smaller and can be grown together better, resulting in higher yields per hectare. Coffee plants of this variety are fertile in their third year, especially in Mexico, with cherry harvesting lasting from January to March. It is the most economically important coffee variety in Central America.Coffee is produced by the wet method. This means that the fruit of the coffee plants is first poured into water to separate the ripe and unripe pieces. The ripe cherries must still be pressed through the crushing plates to remove the top skin. The coffee is then poured into barrels where it ferments for a few hours to several days. During the natural process, the pulp coats the beans. It is then dried either in direct sunlight or in a drier.
As Mexico Chiapas Decafe does not contain caffeine, we also describe how the stimulants are removed. The Mountain Decaf method is interesting and shows that the coffee beans can lose the caffeine but retain all the flavour and aroma. Only the water and carbon filters play a role in the process. Workers first climb Pico de Orizaba to soak the ultra-pure green beans in water (Mexico's highest mountain - 5,636 m above sea level - one of the country's three snow-capped peaks all year round). In this way, they extract the oils and caffeine. They remain in the water, which is passed through carbon filters. The result is decaffeinated water, but full of the natural flavour of coffee. The beans are returned to the water to absorb all the nuances of flavour, aroma and fragrance. In this way, up to 99.9% of the caffeine can be released from the coffee without any chemistry.
Decaffeinated coffee beans can be used in exactly the same way as decaffeinated coffee, in filters, automatic coffee makers and the like. It can be enjoyed by people with sleeping disorders, for afternoon or evening drinking. Also recommended for expectant mothers and breastfeeding women.








Taste and aroma
More gently roasted coffee offers a richer and more complex flavour profile. It better preserves the original nuances of the coffee-growing area, including fruity, floral or nutty notes.

Health benefits
In particular, quality coffee roasted to an ideal profile may contain higher levels of antioxidants such as chlorogenic acid and other phenolic compounds. These substances have anti-inflammatory and antioxidant effects. Unroasted premium coffee is also gentler on the stomach, as it contains fewer acids that can cause irritation.

Plantation coffee is often grown with a greater respect for nature, with an emphasis on responsible farming and fair trade, which can have a positive impact on cultivation and communities.

Instructions for use

Grind the coffee according to its type.
Use at least 1.5-2 teaspoons (about 7 g) of ground coffee per cup.
Pour off the coffee with water at about 95 °C.
